While we each do our part to help stop the spread of Covid-19 by staying home, we’re forced to find new creative outlets to keep ourselves and our families occupied. If you’re a parent, you might be faced with the challenge of balancing productivity while keeping your kids busy, which is a full-time job itself.

 

To lend a helping hand, we’d like to introduce our mascot Elanko. Elanko is a coloring book style image that can help recruit your child’s attention, foster creativity and have a good time. All you need to do is print Elanko and let the creativity run wild.

 

 

We would love to see your child’s version of Elanko! Just snap a photo, post it to Instagram, and use the hashtag #Elanko. If you are posting to a story, don't forget to tag us with @elanskis. We can't wait to see what sort of adventures Elanko is up to.

CHRISTMAS EDITION - ELANKO GINGERBREAD

What You’ll Need:

  • Small skillet

  • Saran wrap

  • Blender/mixer

  • Gingerbread models or our Elanko

  • Decoration tools

Ingredients:

US MEASUREMENTS EUROPE MEASUREMENTS INGREDIENTS
1.05 cups 250 ml brown sugar (demerara)
5 tablespoons 75 ml syrup
5 tablespoons 75 ml water
3/4 cup 150 g butter
1 tablespoon 1 tablespoon cardamom, ground
1 tablespoon 1 tablespoon cinnamon, ground
1 ½ teaspoons 1 ½ teaspoons baking soda
Approx. 3 cups  7-8 dl wheat flour

Step by step:

STEP 1

Mix brown sugar, syrup and water in a small skillet and bring to a boil. 

STEP 2

Add butter and let it melt to the mixture. 

STEP 3

Let the mixture cool down without stirring. 

STEP 4

Add spices, soda and 5-6 dl flour to the mixture. Save rest of the flour for the baking part. 

STEP 5

Mix dough and wrap it with Saran wrap and let it get hard in the fridge for a couple of hours or even better - overnight.

STEP 6

Prepare a table with flour on top. 

STEP 7

Roll the dough to a thin layer and cut with gingerbread molds. You can use any Christmas models or use our Elanko. Print the Elanko on the paper and cut him out with scissors. Put the paper model on the dough and slowly cut out Elanko's shape with a knife.

STEP 8

Bake at 175 °C (347 °F) for 8-10 minutes. 

You can store gingerbreads in a jar for about 2 months (if not decorated).

If you want to decorate your gingerbread, leave them to cool down and then use your imagination for the decorations. You can use Royal icing, Candies, Sprinkling sugars, Rubber stamps, Candy melts, Sprinkles.
